<p>¼ xícara de chá de vagem picada<br />
¼ xícara de chá de chuchu picado<br />
¼ xícara de chá de aipo picado<br />
2 folhas pequenas de alface picada<br />
¼ xícara de chá de broto de feijão<br />
2 colheres de sopa de salsão (talo) picado<br />
1 colher de sobremesa de cebola picada<br />
½ dente de alho espremido<br />
2 colheres de chá de óleo de canola<br />
400 ml de caldo básico de carne para o preparo de sopas<br />
2 colheres de chá de shoyu light<br />
1 pitada de gengibre ralado</p>
<p><em>Modo de Preparo</em></p>
<p>Refogue a cebola e o alho no óleo de canola. Acrescente o salsão, a vagem, o chuchu e refogue. Em seguida acrescente o caldo de carne. Quando estiverem quase cozidos, acrescentes os brotos e a alface. Adicione o shoyu e o gengibre. Sirva em seguida.</p>

<p>Em uma panela grande refogue o alho no óleo de canola. Acrescente os outros ingredientes um a um mexendo sempre. Refogue por 10 minutos e acrescente o caldo básico de carne. Cozinhe por 30 minutos ou até os legumes ficarem macios. Sirva em seguida.</p>

<p>Rasgue as folhas de alface em uma travessa e reserve. Salpique os cubos de pão. Sirva com o molho de alcaparras á parte.</p>

<p>3 fatias de pão integral<br />
1 colher de sobremesa de azeite extravirgem</p>
<p><em>Modo de Preparo</em></p>
<p>Corte o pão em quadrados bem pequenos, mas iguais. Doure um pouquinho o azeite e acrescente os cubinhos de pão e deixe dourar, mexendo de vez em quando, para não queimar. Retire do fogo, passe para um prato e reserve.</p>
<h2>Molho de Alcaparras</h2>
<p><em>Ingredientes</em></p>
<p>6 colheres de sopa de azeite extravirgem<br />
1 colher de sopa de alcaparras<br />
1 colher de sopa da conserva das alcaparras</p>
<p><em>Modo de Preparo</em></p>
<p>Coloque os ingredientes do molho em uma vasilha, exceto os temperos. Macere bem as alcaparras para engrossar o molho. Acerte o tempero com o sal e a pimenta. Sirva acompanhando a salada.</p>

2 colheres de sobremesa de uva-passa<br />

Salsa e cebolinha picada<br />
1 colher de sopa de óleo de canola</p>
<p><em>Modo de Preparo</em></p>
<p>Doure bastante em uma panela com óleo o arroz, o alho, a cebola e o sal. Acrescente a água aquecida e deixe cozinhar em fogo lento até amaciar o arroz. Retire o arroz coloque-o num refratário e misture a cenoura picada, as passas, a salsinha e a cebolinha.</p>

<p>1 dourado inteiro de 2,5 kg<br />
3 cebolas raladas<br />
3 dentes de alho espremidos<br />
2 colheres de sopa rasa de manteiga sem sal<br />
1 copo de vinho branco seco<br />
2 limões<br />
1/2 molho de salsa fresca<br />
1 colher de chá de sal<br />
1 colher de café de pimenta-do-reino branca, moída na hora<br />
2 azeitonas pretas ou verdes</p>
<p><em>Modo de Preparo</em></p>
<p>Descongelar o dourado, escamar, limpar bem e lavar. Fazer um corte na barriga do peixe, lavar e limpar. Enxugar o peixe, retirar os olhos, colocar as 2 azeitonas pretas ou verdes. Numa tigela, misturar as cebolas, o alho e as ervas. Colocar sal e pimenta-do-reino e rechear o peixe. Reservar. Rechear o peixe com a farofa e costurar. Por cima polvilhar no peixe todo sal, pimenta-do-reino branca, moída na hora, caldo de 2 limões. Em um tabuleiro bem untado de manteiga, colocar o peixe, derramando em cima manteiga derretida e o vinho branco. Levar ao forno quente por cerca de 1 hora. Não virar o peixe. Retirar, colocar em uma travessa, enfeitar com salsa e rodelas de limão.</p>

<p>3 filés de salmão<br />
1 colher de sobremesa de azeite extravirgem<br />
1 receita de creme de espinafre<br />
Sal e pimenta a gosto</p>
<p><em>Modo de Preparo:</em></p>
<p>Tempere os filés com sal e pimenta. Pincele os filés com o azeite. Asse os filés em fogo brando, dourando dos dois lados. Coloque numa travessa, cubra com o creme de espinafre e leve ao forno para assar.</p>
<h2>Creme de Espinafre</h2>
<p><em>Ingredientes</em></p>
<p>½ xícara de chá de creme de leite light<br />
½ xícara de leite aquecido<br />
Sal e noz-moscada a gosto<br />
Pimenta vermelha – ½ unidade<br />
½ molho de folhas de espinafre cozidas e trituradas com faca<br />
½ colher de sobremesa de manteiga<br />
½ cebola pequena ralada<br />
1 colher de chá de maisena dissolvida em um pouco de água</p>
<p><em>Modo de Preparo</em></p>
<p>Doure em uma frigideira a cebola na manteiga e acrescente o espinafre triturado. Adicione o leite, o creme de leite, o sal, a noz-moscada e a pimenta. Aqueça em fogo brando por 5 minutos e adicione a maisena dissolvida em água, mexendo bem sem deixar ferver. Sirva em seguida.</p>
